Kitchen Head

A Hotel complex with 100 luxury guest rooms including 24 Deluxe Rooms, the Palmyrah Restaurant and extensive Conference & Banqueting facilities has vacancy for.

Duties

  • Candidate will be heading the overall kitchen operations.
  • Help create new recipes and write menu.
  • Make sure all safety and hygiene standards are met.
  • Manage food purchasing and storage and maintain minimum stocks.
  • Should be able to take room service orders from guests.
  • Roster kitchen staff.
  • Train and develop junior kitchen staff.
  • Carry out portion control.
  • Overlook food present.

Requirements

  • An advanced course certificate in cook, from a recognized hotel school in Sri Lanka or overseas.
  • A minimum of 5 years post qualifying experience in a star class hotel is essential.
  • Excellent knowledge of hot kitchen and cold kitchen required.
  • Knowledge of pastry/bakery and deserts will be an advantage.
  • Applicant should be below 55 years.
  • Be fluent in both spoken and written English and Sinhala.
  • Should be able to handle a la carte and buffet.
